Meet the Chef's at Alexander Hotels 

With a passion for all things culinary and locally sourced, we share the history and experiences that have shaped our Executive head chef's careers and our hotel menus. 


Alexander House Hotel & Utopia Spa, Executive Head Chef, Darrel Wilde

Chef Darrel Wilde brings more than 14 years’ experience to his role, having worked with three highly regarded Michelin Star chefs Raymond Blanc, John Burton and Gary Rhodes. Chef Darrel formed part of the successful team who assisted Gary Rhodes when he secured a win on series 2 of Hell’s Kitchen UK.

A number of influences have shaped Darrel Wilde’s culinary career including a 12 year journey with one of his culinary hero’s, Gary Rhodes. Darrel started his career at Gary Rhodes’s flagship restaurant City Rhodes 1* Michelin 3AA Rosettes in 2000, he then went onto Rhodes in the Square 1* Michelin 3AA Rosettes. Further to this Darrel was also in the opening team of Rhodes 24 in London City where he contributed 2 years helping the restaurant achieve 1* Michelin and 3AA Rosettes and his most recent 7 years with Rhodes restaurants where Darrel worked on numerous projects including Head Chef at Rhodes West One Brasserie and Bar and the opening of the Arcadian Rhodes, on board the Arcadian P&O Cruise Liner.

Langshott Manor, Head Chef, Phil Dixon 

Chef Phil Dixon, offers an impressive 26 years of culinary excellence, with the last 9 years being spent at Langshott Manor. Originally from Northumberland where his love of food began, Phil spent his adolescence growing and foraging food with his grandfather. 

Having headed up the culinary team at Langshott Manor for over 9 years, Chef Phil has worked closely with his two sous chefs to develop the herb garden and vegetable patch, allowing the hotel to fully embrace our locally sourced and locally grown philosophies. 

Barnett Hill Country House Hotel, Head Chef, Lee Young 

Meet Lee Young, our latest Head Chef to join us at Alexander Hotels, taking the reigns of our newest hotel, Barnett Hill. 

Originally from Chichester in West Sussex, Lee has worked and developed his career across a range of luxury leisure destinations. Having only been with us a short time, Lee is working hard to develop the hotels food offering and plans to make Barnett Hill a destination dining experience for local visitors and hotel leisure guests. Lee has plans to bring Barnett Hill to a 2 AA Rosette award standard, using local suppliers where possible. 

Leanne Cleaver, Marketing Manager states ' Having already had the pleasure of experiencing some of Lee's new dishes I can safely say that Barnett Hill is in very capable  hands. We all look forward to the hotels food offering developing and see Lee's culinary passion showcased through his own dishes'.
