Head Sommelier, Great Fosters (Nr Windsor)

The Role

We are seeking an experienced Sommelier who will manage every aspect of wine selection, ordering, storage, service and have the skills and knowledge to develop our teams and inspire them to sell quality wines in our award-winning restaurants.

Your passion for wine and your experience, knowledge and ability will allow you to be successful in;

  • Selecting and appointing wine suppliers for all restaurants and food and beverage outlets at the hotel
  • Selecting wines suitable for all outlets meeting guest expectations for quality and price
  • Ensure all point of sale material and menus are up to date and presented to encourage sales
  • Ensuring wines are stocked in quantities and in a way that ensures quality and constant supply, matching stock levels with expected demand
  • Ensuring stock held is managed with little wastage
  • Ensuring security, quality management of all stocks held through maintaining an optimum environment for the wines and effective stock rotation and stock control
  • Ensuring wine lists are up to date with products and pricing to reflect changes in cost prices
  • Implement a programme of training for food and beverage service staff to help them gain confidence in selling and recommending wines. Your knowledge in pairing wines will be very important.
  • Work with our Executive Chef in selecting wine recommendations for our Restaurant menus
  • Implementing wine service standards across all outlets at Great Fosters
  • Evaluating and actioning all guest feedback in relating to wine sales and service
  • Recommending any sales promotions to encourage sales of wines across outlets

A flexible approach to working must be in your culture and weekend working is definitely a requirement of this role as our food and beverage service areas are busiest over this period.

Requirements;

  • Working days will cover Wednesday to Sunday each week
  • Candidates must hold Master of Wines qualifications or equivalent
  • 5 years’ experience is required to be considered
  • 4/5 Red Star experience as a Sommelier is required

£35,500 per annum, (£33,000 + £2,500 per annum guaranteed service charge payment paid quarterly) + £500 per quarter beverage GP bonus scheme
